Apple Spinach Donuts

Ok, so Maeve is a bit of a donut fiend… loves them. But unfortunately donuts are often cooked in industrial seed oils and then, of course, coated in sugar. Delicious – yes. Good for you – not so much. Now I’m an everything in moderation kind of gal, but I also like to find ways to make a beloved treat into a slightly healthier version. If I can hide a vegetable somewhere you had better believe I will. I also strongly feel that it at least a little bit cancels out the sugar content… right? So these little green donuts came out SO yum. Baked, not fried. Apple and spinach in there. And a delicious little cinnamon sugar sprinkle over the top to give the taste and feel of a real donut but with a little less sugar. Give these a go, they’re YUM!

 

Ingredients:

2 c flour

2 t baking powder

½ c sugar

½ t salt

1 t cinnamon

1 c baby spinach leaves

1 apple, core removed

1 egg

¼ c olive oil

1 c milk

 

Cinnamon sprinkle (optional, but makes it more “donut-y”)

1 t sugar

½ t cinnamon

 

Method:

Preheat your oven to 180 degrees Celsius.

In a large bowl combine your dry ingredients.

In a blender, combine your spinach, apple and wet ingredients and blend until smooth.

Pour your wet ingredients into your dry and carefully mix until just combined. Don’t over mix or they will go hard.

Scoop the mix into donut pans or muffin/mini muffin pans.

Combine the cinnamon sprinkle into a small bowl then use your fingers to sprinkle on top of the donuts.

Bake for 14-18 minutes until a skewer comes out clean.

Allow to cool before devouring.

Store in an airtight container for 3 days or freeze for 3 months.
